Originally from the South-West part of France, the « Black diamond », fruit of the mycelium, is fundable in four major consumed varieties: the Perigord’s black truffle, the summer truffle, the Piemont’s white truffle and the Burgundy’s truffle which are eaten from November to march.
Undetectable by human beings, truffle-harvesters use dogs or pigs who detect truffles due to their highly developed sense of smell.
Forgotten during centuries, they appear back on our tables during the Renaissance period. Kings François 1er and Louis XV associating it to gourmet luxurious delicacies.
